Potato Split

 

Ingredients

  • 1 lg. Potato –baked
  • 2 Tbsp. Toasted sunflower seeds
  • ¼ cup Shredded cheese
  • Salt
  • 3 Tbsp. Lo-fat milk
  • 2 Tbsp. Chopped green pepper
  • 3 Cherry tomatoes (opt)
  • Pepper
  • ¼ cup Cottage cheese
  • 2 Tbsp. Chopped carrot
  • 2 Tbsp. Sliced green onion

Directions

Halve and scoop out potato leaving ¼ inch in shells. Mash potato pulp and add milk, cottage cheese, sunflower seeds, green pepper, carrot, onion, 2 Tbsp. of the shredded cheese, salt and pepper. Gently mix to blend. Preheat oven to 450 deg. Mound into shells and arrange tomato slices (if used) on each, pushing in slightly. Sprinkle with remaining cheese. Bake 10 min. or until heated through. These may be prepared in advance, wrapped and refrigerated up to 2 days. Reheat in regular or microwave oven.
