Microwave Stuffed Potatoes

Ingredients

  • 4 med. Baking potatoes
  • ¼ cup Cream style cottage cheese
  • 2 Tbsp. Butter/oleo
  • ½ tsp. Salt
  • 3 Tbsp. Milk
  • Dash Pepper

Directions

Microwave potatoes about 8 min. on high. Cut potatoes lengthwise and scoop out. Reserve shells. Combine potato, cottage cheese, butter, salt and pepper. Beat until fluffy, adding milk. Return to reserved shells. Arrange on plate and sprinkle with grated cheese (opt). Microwave 45 seconds.

I make these often and feel they are less fattening. Vary by topping with chopped green onion. Can be frozen.
