Rosemary-roasted Red Potatoes

 

Ingredients

  • 3 lbs. Small red potatoes
  • 1/3 cup Olive oil
  • 1 Tbsp. Dried rosemary or 2 Tbsp. fresh
  • ¼ cup Grated parmesan
  • 3 cloves Garlic –crushed
  • ½ tsp. Salt

Directions

In small bowl combine olive oil, garlic, rosemary, cheese, salt and pepper. Quarter potatoes and arrange in a roasting pan. Brush potatoes with ¾ of the oil mixture. Bake un-covered @ 375 deg for 30 - 40 minutes, brushing on remaining oil mixture last 5 minutes.

Makes about 6 servings.
