Winter Minestrone
Ingredients
- 1 Tbsp. Olive oil
- 1 clove Garlic – minced
- 1 med Onion - chopped
- ½ cup Carrot – sliced
- ½ cup Celery – sliced
- 1 cup Cabbage - shredded
- 1 cup Tomatoes – drained
- 1 cup Potato – diced
- 15 oz. Kidney beans
- 1 cup Beef or chicken broth
- ¼ cup Parsley – chopped
- 1 tsp. Basil
- ½ cup Pasta – small
- Pepper to taste
Directions
Combine oil, garlic and onion in 2 qt. Microwave casserole. Cover and microwave 1 min. Add potato, carrots, celery and cabbage. Add juice from tomatoes and microwave, covered, 6 - 8 min. Add tomatoes, beans, stock, parsley, basil and pepper. Microwave 10 min. Meanwhile cook pasta on top of stove. Stir into soup. Sprinkle with Parmesan cheese when serving. This is a good “last minute” soup as ingredients are usually on hand. I cook a little longer as I like vegetables to be fully done.
NOTE: All microwave settings are HIGH.
