Kielbasa/bean Soup
Ingredients
- 1 Tbsp. Bacon grease
- 1 lb. Carrots – sliced
- 1½ lg Onions - chopped
- 2 ribs Celery – chopped
- 2 cups Potatoes, cooked-diced
- 2 lg Pepper - chopped
- 2 lbs. Kielbasa
- 2 cups Tomatoes, fresh
- 2½ cups Tomatoes in juice
- 5 c Can pork & beans???
- 4 oz. Tomato juice
- 1 dash Hot pepper sauce
- 1 tsp. Worcestershire
- 2 dashes Liquid smoke
- ½ tsp. Beef base
- 1 tsp. Brown sugar
- Parsley flakes
- Salt and pepper
Directions
In large soup pot, sauté carrots, onions, celery, potatoes, peppers and kielbasa in drippings. Add remaining ingredients and simmer 3 - 6 hrs. stirring occasionally. Let cool and refrigerate overnight if desired. Reheat the next day adding more seasoning if needed. I usually halve the recipe and use light or turkey kielbasa. Very thick and filling soup.
Great supper with hard rolls or French bread.
