Vegetable Beef Soup

 

Ingredients

  • 2 qt. Water
  • 1½ -2 lb Chuck – cubed
  • 1 Tbsp. Salt
  • 1 small Onion
  • Celery leaves
  • 16 oz. Can tomatoes - diced
  • 1 bag Frozen soup veggies
  • 1 Tbsp. Parsley
  • 2 Bouillon cubes
  • ½ cups Barley
  • 1 can Beef broth
  • 1 cup Water

Directions

Brown meat. Add water, salt, onion and celery leaves. Simmer about 2 hrs. Refrigerate overnight. Skim fat from top and bring to a boil. Add other ingredients and cook for 50 - 60 more minutes.
