Hamburger Vegetable Soup

Ingredients

  • 1 lb. Hamburger
  • 1 cup Chopped onion
  • 1 cup Potatoes - diced
  • 1 cup Carrots – sliced
  • ½ cup Celery – chopped
  • 28 oz. Tomatoes – undrained
  • 1 qt. Water
  • ¼ cup Rice – uncooked
  • 1 small Bay leaf
  • ½ tsp. Thyme
  • ½ tsp. Basil
  • 1 Tbsp. Salt
  • 1/8 tsp. Pepper
  • ¼ cup Cheddar – grated

Directions

Cook meat and onions in oil - drain. Add remaining ingredients and simmer 1 - 1½ hrs. I usually use barley (½ cup) instead of rice and add another cup of water or beef broth.
