Hamburger Vegetable Soup

Ingredients
- 1 lb. Hamburger
- 1 cup Chopped onion
- 1 cup Potatoes - diced
- 1 cup Carrots – sliced
- ½ cup Celery – chopped
- 28 oz. Tomatoes – undrained
- 1 qt. Water
- ¼ cup Rice – uncooked
- 1 small Bay leaf
- ½ tsp. Thyme
- ½ tsp. Basil
- 1 Tbsp. Salt
- 1/8 tsp. Pepper
- ¼ cup Cheddar – grated
Directions
Cook meat and onions in oil - drain. Add remaining ingredients and simmer 1 - 1½ hrs. I usually use barley (½ cup) instead of rice and add another cup of water or beef broth.
