Beef ‘n’ Barley Soup

 

Ingredients

  • 1 lb. Beef stew meat – cubed
  • 2 Tbsp. Olive oil
  • 5 cups Water
  • 1 med Onion – chopped
  • 1/3 cup Barley
  • 2 Tbsp. Beef bouillon
  • ½ tsp Thyme
  • ½ tsp. Marjoram
  • 1 Bay leaf
  • ¼ tsp. Pepper
  • 5 med Carrots
  • 1 cup Celery - sliced
  • ½ lb. Green beans

Directions

Cut meat into ½ in. or less cubes. Brown in oil in dutch oven or soup pot. Drain and add water, onion, barley, bouillon and spices. Cook slowly for 1 - 1½ hr. Add carrots, celery and green beans broken into 2’’ pieces. Cook another 45 min. or more. Remove bay leaf. I use ½ c barley and add more liquid.

May add /substitute other veggies.
