Beef ‘n’ Barley Soup
Ingredients
- 1 lb. Beef stew meat – cubed
- 2 Tbsp. Olive oil
- 5 cups Water
- 1 med Onion – chopped
- 1/3 cup Barley
- 2 Tbsp. Beef bouillon
- ½ tsp Thyme
- ½ tsp. Marjoram
- 1 Bay leaf
- ¼ tsp. Pepper
- 5 med Carrots
- 1 cup Celery - sliced
- ½ lb. Green beans
Directions
Cut meat into ½ in. or less cubes. Brown in oil in dutch oven or soup pot. Drain and add water, onion, barley, bouillon and spices. Cook slowly for 1 - 1½ hr. Add carrots, celery and green beans broken into 2’’ pieces. Cook another 45 min. or more. Remove bay leaf. I use ½ c barley and add more liquid.
May add /substitute other veggies.
