Black Bean Soup

 

Ingredients

  • 1 lb. Black beans
  • 3 med Onions-chopped
  • 2 Green peppers
  • 2 Tbsp. Olive oil
  • 1 tsp. Oregano
  • 1 Bay leaf
  • ¼ tsp. Cumin
  • 4 cloves Garlic – minced
  • ½ tsp. Black pepper
  • 1 Tbsp. Salt

Directions

Clean and wash beans and soak overnight in 2 quarts water. Pour into soup kettle, bring to boil and turn heat down to simmer. In skillet, sauté onions and green peppers (cut into strips) in oil, add oregano, bay leaf, cumin and garlic. Add to beans stirring well, while adding salt and pepper.

Cook slowly about 8 hrs.

This is a very thick soup.
