Tossed Salad W/strawberries And Almonds

Ingredients

  • ½ cup Sliced almonds
  • 1 cup Sliced celery
  • 4 tsp. Sugar
  • 1 lg Red leaf lettuce bunch
  • 1 cup Strawberries – sliced
  • 3 Green onions
  • Dressing:
  • 1 tsp. Salt
  • ½ cup Veg. Oil
  • 2 Tbsp. Parsley - chopped
  • 4 Tbsp. Vinegar
  • 4 Tbsp. Sugar

Directions

Make dressing and refrigerate. Cook and stir almonds and sugar over low heat until sugar melts and nuts are covered. Sugar caramelizes suddenly so stir constantly. Cool and break apart. Cut core from lettuce. Wash and tear into bite size pieces. Shake off excess water and place in large plastic bag with celery and onion. Pour dressing into bag 5 min. before serving. Add berries and shake until well coated. Add almonds last.
