German Potato Salad

Ingredients

  • 4 lbs. Salad potatoes
  • ¾ cup Water
  • Sauce:
  • 6-8 slices Bacon
  • ½ cup Drippings
  • ½ cup Sugar
  • 4 Tbsp. Flour
  • 2 tsp. Salt
  • ¼ tsp. Pepper
  • 1 cup Vinegar
  • 1 cup Water
  • 6 Green onions

Directions

Place potatoes, unpeeled, in water and boil for 10 min. Turn to low heat for 15 min. and let stand about 15 more min. Run cold water over and stand 5 mi. Peel and slice into large bowl.

Cut bacon into small pieces and brown - remove from drippings. Blend sugar, flour, salt and pepper and add to drippings making a paste. Add vinegar & water slowly and boil 2-3 min. stirring constantly. Add to potatoes along with some green onion (chopped) and ½ of the bacon reserving rest of onion & bacon to garnish top. Let stand at room temp. 3-4 hrs.
