Lemony Lemon Bars

Crust Ingredients:
- 1 Cup all-purpose flour
- ¼ Cup granulated sugar
- 1/2 teaspoon table salt
- 8 Tablespoons melted, unsalted butter
Crust Method:
Wisk together Flour, sugar and salt. Add melted butter and mix. Press into 8X8 baking pan fitted with foil sling. Bake at 350 degrees for 19-24 minutes until dark golden brown.
Filling Ingredients:
- 2 teaspoons cream of tarter
- 1 Cup granulated sugar
- 2 Tablespoons flour
- 1/4 teaspoons table salt
- 3 eggs plus 3 yolks
- 2/3 cup lemon juice
- 2 teaspoons lemon zest
- 4 Tablespoons unsalted butter
Method:
Wisk together cream of tarter, sugar, flour and salt. Add eggs and egg yolks and wisk together. Add lemon juice and zest. Cook over medium heat, stirring constantly until temperature reaches 160 degrees. Remove from heat and add butter.
Strain mixture through fine strainer. Pour onto crust and shake to level. Return to 350 degree oven for 8 to 12 minutes until set.
Remove from oven and cool for one and a half hours. Cut into 12 pieces.
Makes 12 bars.
