Overnight Sourdough Yeast Pancakes

Ingredients

  • 1 pkg. dry yeast
  • 2 cups lukewarm water
  • 3 cups flour
  • ¼ cup hot water
  • ½ tsp. baking soda
  • 2 eggs, beaten
  • Salt
  • 1 Tbsp. molasses

Directions

This recipe is a favorite that Martha’s Dad used to make.  We hope you enjoy it, too!

In the evening, dissolve dry yeast in lukewarm water and then stir in flour.  Cover and let stand overnight at room temperature.

In the morning, dissolve the baking soda in the hot water and add that, along with the beaten eggs, salt (just a pinch), and molasses.  Gently stir or fold the batter – don’t beat it.  Cover again and let stand for half an hour.  Batter will be quite doughy.

Bake on an ungreased griddle (cast iron works especially well).  Serve with butter or margarine, maple syrup, or your favorite pancake toppings. 

Serves about 4 people.
