Beef Tenderloin Deluxe
Ingredients
- 2 lbs. Beef tenderloin
- 4 Tbsp. Butter
- ¼ cup Green onions - chopped
- 2 Tbsp. Soy sauce
- 1 Tbsp. Dijon mustard
- ¾ cup Cooking sherry
Directions
Spread tenderloin with 2 Tbsp. of the butter and place on rack in shallow baking pan. Bake, uncovered, @ 400 deg for 20 min. In small saucepan, sauté the onions in the remaining butter. Add the soy sauce, mustard and sherry (last). Heat just to a boil and pour over tenderloin and bake 20 -25 min. more for rare to medium rare beef. Baste frequently with sauce. Pass remaining sauce when serving.
Makes about 4 servings.
