Brisket Of Beef

Ingredients

  • 5+ lbs. Brisket – trimmed
  • 2 tsp. Salt
  • ¼ tsp. Pepper
  • 2 Onions – sliced
  • 4 stalks Celery – sliced
  • ½ cup Catsup
  • 8 oz. Beer (or more)

Directions

Place beef in roasting pan, fat side up. Season. Place onions, celery and catsup over beef and add ¼ cup water. Roast @ 350 deg uncovered, basting until well browned (45-60 min). Bake, covered, 2 hours more. Pour beer over, recover and cool. Remove meat and refrigerate. Next day, slice beef. Strain liquid and pour over meat. Reheat before serving.
