Shrimp/Lobster Stir-fry

 

Ingredients

  • 1 lb. Shrimp or mock lobster
  • 1/3 cup Italian dressing
  • ½ cup ea:
    • Sliced carrots
    • Zucchini
    • Mushrooms
    • Red onion
    • Red & yellow pepper
    • Snow peas
  • 1 Tbsp. Soy sauce
  • ¼ tsp. Ground ginger

Directions

Blend dressing, soy sauce and ginger. Reserve 2 tablespoons. In WOK heat dressing mixture and cook carrots, covered, 10 min. Add remaining veg. and cook, covered, an additional 10 min, Cook shrimp in remaining 2 Tbsp. dressing about 4min. on high heat, stirring often. Return vegetables and heat through. Serve on Rice.
