Chicken Casserole

Ingredients

  • 1 lb. Cooked Chicken breast – Diced
  • 2 Onions - minced
  • 2 can cream of Chicken soup
  • 2 cups Celery – diced
  • 1 cup Mayo
  • 1 can Water chestnuts – diced
  • 5-7 oz. Potato chips – crushed
  • 1½ cup Shredded Cheddar

Directions

Mix all ingredients reserving ½ of the chips. Put in buttered 9 x 13 pan. Bake about ½ hour at 375 deg topping with remaining chips for the last 10 min. Bake until browned and bubbly. I like to use Rotisserie chicken for its flavor, moistness and ease.

I also microwave celery and onion for a minute or so as I like it a little less crunchy. Chive and onion or ranch potato chips also add to flavor.
