Berries On A Cloud

Ingredients

  • Bottom:
  • 6 large Egg whites
  • ½ tsp. Cream of tartar
  • 1 tsp. Vanilla
  • 2 cups Sugar
  • 1 Tbsp. Vinegar
  • Filling:
  • 16 oz. Cream cheese
  • 1 cup Sugar
  • 1 tsp. Vanilla
  • 2 cups Whipped cream
  • 2 cups Mini marshmallows
  • Top:
  • 1 can Cherry pie filling
  • 1 tsp. Lemon juice
  • 2 cups Fresh strawberries (May use 1 pkg frozen)

Directions

Bottom:

Beat egg whites and cream of tartar - gradually add sugar, vanilla and vinegar. Beat until stiff and holds a peak. Pour into greased 9 x 13 pan and bake 1 hr. at 250 deg. Turn off oven and leave in another 2 hours.

Filling:

Mix cream cheese and sugar and add vanilla. Fold in whipped cream and marshmallows. Spread over cooled meringue.

Top:

Mix and add as topping for above. Refrigerate 12 hrs. or at least overnight.
