Chocolate / Mint Squares
Ingredients
- 2 large Eggs – beaten
- ½ cup Oleo – melted
- 1½ tsp. Peppermint extract
- ½ cup Flour – sifted
- ½ cup Chopped nuts
- 1 cup Sugar
- 3 oz. Unsweetened Chocolate
- 1 cup powdered sugar
- 2 Tbsp. Soft oleo
- 1 Tbsp. Cream/milk
- Green food color (opt)
Directions
Combine eggs, sugar, melted oleo and beat well. Blend in 2 oz melted chocolate and ½ tsp. extract. Stir in flour and nuts. Pour into greased 9 x 9 pan. Bake at 350 for 30 min. Cool and spread with topping: powdered sugar, soft oleo, cream, 1 tsp. extract and color (if used). When firm, melt 1 oz chocolate, add 1 Tbsp. oleo. Mix well and spread over frosting.
Long time family favorite usually made at Christmas time.
