Grandpa’s Eggs

Ingredients
- 4 strips Bacon
- 6 Eggs
- ¼ cup Milk
- 4 Tbsp. Cheddar Cheese
- 4-6 Green onions
- 1 tsp. Nutmeg
- Salt
- Pepper
Directions
Cut bacon across the strips into 1/8 inch pieces. Fry in appropriate size coated pan until crisp. Meanwhile beat eggs, milk and spices until frothy. Add cut-up white portion of the onions to the egg mixture, reserving the chopped green tops for garnish. Reserve about half the bacon for garnish and pour off the grease. To the bacon left in the pan, add the egg mixture and cook until starting to set (giving an occasional stir). Add chopped or grated cheese over the top and cover until cheese begins to melt. Sprinkle the green onion tops and rest of the bacon chips over the eggs and cover for another minute or two. Slip the batch out onto a platter and serve. Variations include adding chopped green pepper and/or hash-browned potatoes to the mix. Can be made in larger batches.
