Egg And Potato Casserole
Ingredients
- 12 oz. Frozen hash browns
- 6 lg Eggs ( hard boiled)
- 6 slices Bacon (diced)
- 1 cup Sour cream
- 2 Tbsp. Fresh parsley (snipped)
- Salt
- Pepper
- Paprika
Directions
Place unopened bag of hash browns on plate and microwave 7 minutes. Slice shelled eggs crosswise. Microwave bacon and stir drippings into sour cream along with parsley. In 2 qt casserole make 3 layers each of potato, eggs, bacon and sour cream mixture ending with sour cream on top. Add salt, pepper, and dust with paprika. Microwave 8 min or until heated thru.
Serves 6.
