Cranberry Bread

Ingredients
- 2 cup Flour
- 1½ tsp. Baking powder
- 1 cup Sugar
- ½ cup Orange juice
- 2 Tbsp. Hot water
- 1 Orange rind
- 1 cup Cut cranberries
- ½ tsp. Salt
- ½ tsp. Baking soda
- 1 lg Egg (beaten)
- 2 Tbsp. Butter (melted)
- ½ cup Chopped nuts
Directions
Sift together dry ingredients. Add egg, melted butter, orange juice and hot water. Combine only until dry ingredients are moistened. Fold in nuts, cranberries and chopped orange rind. Bake in greased loaf pan1 hr @ 350 deg. Cool 10-20 min. Remove from pan. Cool on rack.
I often make mini loaves for gifts. Can also be made into muffins.
