Quivey’s Grove Pumpkin/raisin Muffins
Ingredients
- 4½ cups Sifted Flour
- ½ tsp. Salt
- ½ tsp. Allspice
- ½ tsp. Nutmeg
- ½ cup Brown sugar
- ¼ cup Molasses
- 2 lg Beaten eggs
- 1 cup Raisins
- 2 tsp. Baking soda
- ½ tsp. Ground ginger
- ½ tsp. Cinnamon
- ½ cup Sugar
- 1¾ cup Buttermilk
- 2 cup Canned pumpkin
- ½ cup Butter (melted)
Directions
In large bowl combine flour, salt, baking soda, sugar and spices. In second large bowl combine buttermilk, molasses, pumpkin, eggs, butter and raisins. Add half of dry ingredients to liquids and mix. Add remaining dry ingredients and mix just enough to moisten. Fill greased muffin tins to top with batter and sprinkle with brown sugar.
Bake @ 375 deg 20-25 min.
Makes about 2 dozen.
